- Killer Chicken Thighs -

What you need:

Chicken Thighs

Olive Oil

Big Green Egg Citrus & Herb rub

​

Cooking Time:  30 minutes

Cooking Temp:  350ºF

Wood:  Cherry or Peach

  • Rub thighs with olive oil

  • Season with rub.  

  • Cook at 350 for 15 minutes.

  • Grill at 350ºF until chicken temp reaches 165ºF

- Beer Can Chicken -

What you need:  

Whole Chicken (4-5 lbs.)

Olive Oil

SuckleBuster's Clucker Dust

Apple Chunks

Old Mule Half Kick Sauce (Chef's Sauce)

Beer/soda (Chef's Choice)

Chicken throne

​

Cooking Time:  1.5 - 2 hours

Cooking Temp:  350ºF

Wood:  Maple or Apple

  • Mix BBQ sauce & beer in chicken throne

  • Rub chicken with olive oil

  • Season chicken with Clucker Dust  

  • Firmly wedge potato or apple chunk in neck of chicken

  • Put chicken on throne, tail side down (like chicken is sitting on throne) and place in cooker

  • Cook at 275ºF until chicken internal temp reaches 170ºF in the armpit (approx. 1.5 to 2 hours)

- Easy Chicken -

What you need:  

Whole Chicken (4-5 lbs)

Lyssa Lu's Poultry Rub

Olive Oil

​

Cooking Time:  2 to 3 hours

Cooking Temp:  275ºF

Wood: Maple or Apple

  • Rub chicken with Olive Oil  

  • Season with Lyssa Lu's Rub

  • Cook, breast side down, at 275ºF for 2-3 Hours

  • Chicken is done when the temperature between the wing and body (armpit) reaches 170ºF degrees.

- Turkey Fatty -

What you need:

2lbs Ground Turkey

Mushrooms - thinly sliced

Onion - thinly sliced

3 or 4 slices of provolone cheese

3 or 4 slices of deli ham

Sucklebuster's Gator Cajun Rub

Suckle buster's BBQ Sauce (chef's choice)

Wood:  Sassafras

Cooking Time:  3-4 hours

Cooking Temp:  225ºF

  • Place turkey on a griling mesh and flatten into a rectangular mat

  • Season turkey with rub

  • Layer cheese, ham and veggies on turkey mat

  • Tightly roll into a log

  • Season outside of log with rub

  • Cook on grilling mesh at 225ºF for 3 - 4 hours

  • Baste log with BBQ sauce after every hour of cook time

  • Log is done when internal temp reaches 170ºF

- Nonnie's Wings -

What you need:

Chicken Wings

Preston's Wing Rub

​

Cooking Time: 25 minutes

Cooking Temp:  350ºF

Wood: Maple or Cherry

  • Toss wings in rub.

  • Cook at 350 for 15 minutes.

  • Flip and grill at 350 until meat reaches 165ºF

- Smoked Turkey -
What you need:
Turkey
Olive Oil
Lyssa Lou's Poultry rub
Cooking mesh
 
Cooking Time: 9 lbs. - 12 lbs. = 3-5 hrs, 18 lbs. = 5-7 hrs.
Cooking Temp: 250ºF - 375ºF
Wood: Maple or Pecan
  • Remove the plastic temperate indicator and toss

  • Lightly rub skin with olive oil & season bird all over (we prefer Lyssa Lu's or AZ Gregg's Chicken Rub)

  • Place bird on a non-stick cooking mesh, breast side down, on your grill. 

  • If you're concerned that the legs and wings will get done to quickly wrap them with foil a half hour before the bird is scheduled to finish.

  • For the last hour, turn grill up to 350 - 375ºF.

  • When the internal temperature in the breast hits 165, place bird on a platter and cover with foil and let rest for about 10 minutes.

  • Carve and enjoy!

 
- Whole Turkey -
What you need:
Turkey
Olive Oil
Lyssa Lou's Poultry rub
Cooking mesh
 
Cooking Time: 9 lbs. = 1-1.5 hrs, 12 lbs. = 1.5-2 hrs, 18 lbs. = 2.5-3 hrs.
Cooking Temp: 325ºF
Wood: Maple or Pecan
  • Remove the plastic temperate indicator and toss

- Butterfly (Spatchcock) Turkey -
What you need:
Whole Turkey (15 lbs.)
Butter
AZ Greg's Sweet and Sassy Chicken Rub

Cooking Time: 2-1/4 hrs
cooking Temp: 160 - 225 - 400ºF
Wood: Cherry or Apple
  • Remove backbone by cutting down each side with a large, sharp knife or kitchen shears
  • Pat skin dry
  • Take softened butter and mix with AZ Greg Chicken Rub, take butter mixture and rub under the skin.
  • Season outside of turkey on both sides with rub
  • Cook turkey skin side up at 160ºF for 30 min
  • Cook  at 225ºF for 1 hr
  • Turkey is done when breast temp reaches 165ºF

- Butterfly (Spatchcock) Chicken -
What you need:
Whole Chicken (4-5 lbs.)
Olive Oil
Big Green Egg Sweet & Smokey Rub

Cooking Time: 2-1/4 hrs
cooking Temp: 160 - 225 - 400ºF
Wood: Cherry or Apple
  • Remove backbone by cutting down each side with a large, sharp knife or kitchen shears
  • Rub both sides of chicken with olive oil
  • Season both sides with rub
  • Cook chicken skin side up at 160ºF for 30 min
  • Cook  at 225ºF for 1 hr
  • Finish at 400ºF for 45 min
  • Chicken is done when breast temp reaches 165ºF

- Chicken Hindquarters -
What you need:
Chicken Hindquarters
Olive Oil
High Mtn. Poultry Rub
Ruff's BBQ Sauce (Chef's Choice)

Cooking Time: 45 min.
Cooking Temp: 350ºF
Wood: Cherry
  • Rub Chicken with olive oil

  • Season with poultry rub

  • Grill until chicken temp reaches 155ºF internally

  • Apply BBQ sauce

  • Continue grilling until chicken temp reaches 170ºF internally
